Vineyard
The Trousseau originates from the "Les Grandes Gardes" parcel, with old vines of approximately 60 years. The soil consists of red marl, rich in clay and lime, providing structure and depth. The south-westerly exposure guarantees sufficient ripening without overripeness. With a limited yield of 40 hl/ha, the concentration remains high. The light soil structure contributes to finesse and aromatic precision.
Vinification
The grapes are harvested manually and selected with extreme care, with only perfectly ripe berries being retained. Fermentation occurs spontaneously with indigenous yeasts, followed by aging in amphorae. This vinification method, without oak influence, emphasizes the purity of the fruit and the terroir. Extraction remains gentle to preserve finesse and elegance. The wine is bottled with minimal intervention and without heavy filtration.

Domaine Désiré Petit
Frankrijk · Jura
