Vineyard
The Trousseau grapes come from a beautiful plot called `Les Grandes Gardes`. The soil, which has a light structure, shows red hues and consists mainly of clay and limestone with an sublayer of marl. The vines on this 1-hectare plot, which is southwest-facing, are about 60 years old and yield 40 hl per hectare.
Vinification
The hand-picked grapes undergo a semi-carbonic maceration for 2 months. During this process, the grapes are kept submerged in the juice by a large grill to prevent oxidation. The wine is not pumped over during fermentation. Afterwards, the wine ages for 9 months in large foudres. No sulfites are added during vinification. The wine is bottled unfiltered.

Domaine Désiré Petit
Frankrijk · Jura
