Vineyard
The grapes come from the Larniano vineyards around San Gimignano. Sangiovese and Merlot grow in the Caggio area, on soils rich in stones and sandstone with a northeastern exposure, while the Pinot Noir comes from La Ventola. The vineyards are located at an altitude of 300 to 350 metres, which supports the freshness of the wine. The soils are clay-sandy with a lot of skeleton and pieces of sandstone. The harvest is done manually with selection in the vineyard.
Winemaking
This rosé is vinified like a white wine, with very gentle and slow pressing to extract only a light colour from the grapes. This ensures freshness and precision remain central. Fermentation takes place in stainless steel tanks at 19°C. The wine is then bottled as early as January after the harvest to preserve its vibrant fruitiness as much as possible. The style is crisp, thirst-quenching, and mineral.
