Vineyard
The soil of the 350-meter-high plots belongs to the Sidérolithique soil type. This acidic, iron-rich, and reddish soil originated in the Early Tertiary from deposits formed by the erosion of the Massif Central. The top layer, rich in large round pebbles, quartz, and quartzite, rests on a hard layer of secondary limestone. The average age of the vines is 50 years.
Vinification
The grapes are hand-picked and destemmed upon arrival at the winery. Vinification occurs naturally. The co-fermentation and maceration last 30 days and take place in egg-shaped tanks. A mix of barriques and egg-shaped vats is used for the 18-month maturation.
