Vineyard
The Bouysselet grapes originate from Villaudric. One plot, measuring only 0.7 hectares, is planted with 40-year-old vines onto which the Bouysselet variety was grafted in 2011. The second plot measures 1 hectare and was grafted in 2015, this time onto young vines. The soil consists of pebbles and red clay. The Chenin and Sauvignon Blanc grapes come from a mixed plot with stony clay soil.
Winemaking
The bunches are picked by hand, destemmed and lightly crushed. In the wine cellar, all processes occur with the help of gravity. After gentle pressing, natural fermentation takes place in stainless steel tanks. Malolactic fermentation and 6 months of maturation then occur in the same vats.
