The Nebbiolo grapes come from the 1.89-hectare Sottocastello di Novello vineyard, which is located at the foot of the Novello Castle. The plot is south/southeast-facing and lies 450 meters above sea level. There are approximately 5,000 vines per hectare, yielding 5.5 tons per hectare. The 15-year-old vines grow on a soil of white-grey marl and clay; higher up the hill, we find more sand and sandstone, and the color evolves from dark grey to yellow towards the top.
Vinification
Approximately 25 to 30% of the bunches are not destemmed. Fermentation starts spontaneously through indigenous yeasts. This process takes 15 to 20 days and is temperature-controlled. This is followed by a 25 to 30-day maceration. Finally, the wine matures for 24 months in large wooden barrels, followed by a 12-month maturation in concrete tanks. It is bottled unfiltered. The annual production is approximately 9,000 bottles.

Azienda Ca' Viola

Azienda Ca’Viola is het levenswerk van Beppe en Simonetta Ca’Viola. Beppe groeide op tussen de wijngaarden van Montelupo Albese en studeerde oenologie in Alba. Eind jaren tachtig kon hij er zijn gedroomde wijngaard Barturot huren, die hij bewerkte met de tractor van zijn vriend Maurizio Anselmo. De wijn maakte hij aanvankelijk in de garage van zijn ouders. Toen de gerenommeerde wijnbouwer Elio Altare zijn Dolcetto proefde, overtuigde hij Beppe om hem te bottelen. Zo verschenen in 1991 de eerste 860 flessen Ca’Viola. Niet veel later volgde een Barbera, gerijpt in barriques en uitgebracht als Vino da Tavola. De wijn werd meteen een succes, mede dankzij het opvallende etiket van Gianni Gallo, geïnspireerd op Montelupo – letterlijk ‘berg van de wolf’.
