Vineyard
The Nebbiolo grapes come from the 1.89-hectare Sottocastello di Novello vineyard, located at the foot of the Castello di Novello. The plot is oriented South/Southeast and lies 450 meters above sea level. There are approximately 5,000 vines per hectare, yielding 5.5 tons per hectare. The 15-year-old vines grow in a soil of white-grey marl and clay; higher up the hill, we find more sand and sandstone, and the color evolves from dark grey to yellow towards the top.
Vinification
About 25–30% of the bunches are not destemmed. Fermentation starts spontaneously through indigenous yeasts. This process in concrete tanks takes 15–20 days and is temperature-controlled. This is followed by a 25–30 day maceration. Ageing begins with a 36-month stay in large wooden vats, followed by 12 months of ageing in ceramic amphorae. Finally, there is a further 24 months of bottle ageing in the domain's cellars. The production of this Riserva, which is only made in the best vintages, amounts to about 1,800 bottles.

Azienda Ca' Viola
