This cuvée originates from 20 hectares of vineyards around the village of La Roche Vineuse and represents about half of the estate. The soils consist of a mix of limestone, marl, humus-rich earth, and flint. This varied subsoil gives the wine both tension and juiciness. The vines are on average 25 years old. The vineyards are organically farmed.
Winemaking
The grapes are gravity-fed directly into the pneumatic press. Fermentation takes place with natural yeasts in thermoregulated stainless steel tanks. The wine then matures for 10 months on fine lees, which adds extra roundness and depth. Before bottling, it is lightly filtered and given a small dose of sulfites to ensure stability and freshness. This approach keeps the wine pure, fresh, and typically Burgundian in style.

In 2005 besloot Jean-Christophe Perraud het familiebedrijf een nieuwe richting te geven. Waar zijn vader de druiven nog aan de coöperatie leverde, bottelt Domaine Perraud vandaag alle wijnen onder eigen naam. Zo groeide het domein uit tot een moderne Bourgogneproducent met een sterke eigen identiteit en toegankelijke kwaliteitswijnen.
