The 1.5-hectare plot is located halfway up a southeast-facing hillside in Meloisey. The 30-year-old vines thrive on a clay and limestone subsoil. The soil is mechanically worked to control weeds, and they perform a green harvest to keep yields under control.

Winemaking

The grapes are picked by hand. Vinification takes 18 to 25 days, in contrast to the more common 10 to 12 days in Burgundy. This allows for a slower extraction process. Fermentation and malolactic fermentation take place in wooden barrels. The subsequent aging process starts with 12 months in wooden barrels, with a limited percentage of new barrels. This is followed by 6 months in stainless steel tanks.
