Vineyard

The vineyards are located in Saint-Bauzille-de-la-Sylve in the Hérault, in the heart of the Languedoc. The Mediterranean climate, with abundant sunshine and cool nights, promotes good aromatic ripening of the grapes. Sauvignon Blanc contributes freshness and aromatic tension, while Rolle provides roundness and structure. This combination yields a balanced white wine with lively acidity and a subtle minerality.

Winemaking

The grapes are harvested at night to optimally preserve the freshness of the fruit. They are picked at the moment of optimal ripeness to retain vibrancy and aromatic expression. After harvesting, a slow pressing follows to gently extract the juice. The Sauvignon then undergoes cold stabulation at around 6°C for about a week. This technique helps to extract aromatic thiols and gives the wine its distinct citrus and fruit character.

In het hart van de Languedoc, in Saint-Bauzille-de-la-Sylve, ligt Mas de Janiny. Het domein kent een familiegeschiedenis van meer dan een eeuw. Vier generaties geleden zette Alfred Julien het familiebedrijf verder en stond hij mee aan de wieg van de lokale coöperatieve kelder. Zeventig jaar later kozen Pascal en Thierry Julien ervoor om een eigen koers te varen. Ze bouwden Mas de Janiny uit tot een zelfstandig domein en behoorden tot de pioniers van de biologische wijnbouw in de Languedoc. Vandaag zet ook de jongste generatie deze familiale traditie verder.
