Vineyard
The mere 0.67-hectare plot is located on the lower half of the flank that rises above Chablis, thus situated between the historic vineyards of Chablis. The 58-year-old vines thrive on a soil of marl, clay, and limestone dating from the Kimmeridgian.
Winemaking
The grapes are hand-picked. The vinification takes place entirely with the aid of gravity. The bunches are cooled upon arrival at the winery and undergo direct pressing. Fermentation is initiated by indigenous yeasts and proceeds at 16-17 °C. The wine matures for 16 months in 228-liter oak barrels of varying ages. Annual production is only a good 1,000 bottles.

Domaine de l'Enclos werd in 2016 opgericht door de broers Romain en Damien Bouchard, maar hun wijnverhaal begon al veel vroeger in het familiebedrijf. Na jaren ervaring en een eerste eigen project besloten ze hun droom waar te maken met een zelfstandig domein. Vandaag beheren ze bijna 30 hectare wijngaarden, waaronder enkele prestigieuze Grand Cru- en Premier Cru-percelen in Chablis.
