Vineyard
The vineyards are located on the Eichberg, facing south, south-west and south-east, at an altitude of 500-550 m. The soil consists of calcareous sand and gravel ("Sand & Schotter") combined with lime, ensuring good drainage, heat storage during the day, cooling at night, and minerality in the wine. The vines are around 15-35 years old.
Winemaking
The harvesting is done manually. Fermentation, in used 500-liter wooden barrels, starts spontaneously with indigenous yeasts. The wine remains in contact with the fine lees for 15 months in the same barrels and was bottled in December 2022. Vinification occurs without added sulfites; only a very minimal amount of 10 mg of sulfites per liter is added at bottling. It contains 1.7 grams of residual sugar per liter.
