Vineyard
The soil of this vineyard consists of heavy clay with a high proportion of limestone. Its unique location in a valley near the Swiss border provides southern currents that bring warm Mediterranean air.
Winemaking
Upon arrival at the winery, the grapes are gently crushed and then immediately pressed. The resulting must is left to rest for 24 hours in stainless steel tanks. The juice is then transferred to barriques where fermentation takes place. The subsequent malolactic fermentation occurs spontaneously. The wine then ages on its lees for several months, after which it is lightly filtered and bottled. It contains 1.3 grams of residual sugar per liter.
