Vineyard
The vineyards are situated on the gravel plateau of Pauillac with deep Garonne gravel and underlying limestone. This ensures excellent drainage and deep root development. Biodynamic farming encourages biodiversity, soil biology, and low yields. 2015 saw a warm, dry growing season with ideal ripeness and healthy grapes up to harvest.
Vinification
Vinification is carried out parcel by parcel with separate fermentation in concrete, stainless steel, and partly wooden vats. Maceration is relatively long (up to ±3–4 weeks) to extract structure and colour. Since the biodynamic conversion, a portion of amphorae has also been used for micro-oxidation and texture refinement. Ageing takes place for ±16–18 months in French oak with approximately 50% new barrels. The goal is a combination of classic Pauillac structure with increased softness and precision.

Onder leiding van Alfred Tesseron groeide Château Pontet-Canet uit tot een van de meest vernieuwende domeinen van Bordeaux. Begin jaren 2000 schakelde het château volledig over op biodynamische wijnbouw, met gezonde bodems, biodiversiteit en zelfs paarden in de wijngaard als fundament voor wijnen met een uitzonderlijke terroirexpressie.
