Vineyard
The 6-hectare vineyard is situated on a south-facing hill in Sabran, Southern Rhône, with terraces of sandy-loam soils. The warm, windy Mediterranean climate promotes ripeness, while the winemaker strives for elegance and balance. Organically certified since 2021, without pesticides or herbicides, using natural fertilizers. The old Grenache and Syrah vines are goblet-trained and harvested by hand.
Vinification
The grapes are vinified per plot and only assembled before bottling. 100% destemmed and lightly crushed, followed by a spontaneous fermentation with indigenous yeasts at a controlled temperature of 23°C. Maceration lasts approximately 12 days with daily pump-overs. The wine ages for 10 months in tanks and is clarified by natural settling, without filtration.
