Vineyard
The grapes for La Gille come from one of the most historic vineyards in Gigondas. The northwest-facing plot is located halfway up the slope, just below the village center, and benefits from a refreshing valley wind that originates in the valley west of the village. The soil consists of limestone, clay, marl, and large quantities of sand and safres (compressed sand).
Vinification
The grapes are destemmed upon arrival at the winery. Vinification takes place in a mix of conical wooden vats and stainless steel tanks, where the grapes undergo a long maceration. The one-year maturation occurs in foudres and conical vats.
