Vineyard
The grapes come from various 170-hectare plots planted with 18 to 30-year-old vines. The carbonate-rich soil consists of rounded pebbles embedded in sandy and calcareous clay. The vineyards are located in the Duero Valley, partly in the river's alluvial deposits and partly on low-lying terraces. A mix of grass and natural vegetation grows between the vines. Yield is limited to 2.5 tons per hectare. Organic viticulture is practiced, meaning no chemical products are used: fauna and viticulture go hand in hand here.
Winemaking
Picking is done only during the cool morning hours. The grapes are gently crushed and then remain in contact with the juice for a short while. Only the free-run juice is used. This undergoes spontaneous fermentation by indigenous yeasts. Maturation on fine lees takes place in French oak barrels.
