Vineyard
The soil originated in the Turonian. It consists of a top layer of clay and limestone that is only 30 to 50 cm deep, below which you will find a thick layer of rocks.
Vinification
The bunches are hand-picked and transported in small crates to the winery. Once there, they undergo a second selection, and the grapes are destemmed. The co-fermentation and maceration take 10 to 18 days and occur in Stoeckinger barrels. This process takes place at temperatures between 16 and 24 °C.

Domaine des Roches Neuves
Frankrijk · Loire
