The grapes for this cuvée come from the most historic plots of the domain. It concerns one specific terroir, "Terres Blanches", which is dominated by a chalky clay soil located on relatively steep and south-facing slopes. The average age of the very thick vines is around 30 years. There are 9,500 vines per hectare, yielding 45 hl per hectare.
Winemaking
The grapes are picked by hand. Fermentation takes place at a low temperature, fluctuating between 15 and 18 °C, which helps to preserve the aromas as much as possible. This process occurs in large, upward-tapering, rectangular concrete vats to facilitate the settling of sediment. This wine does not undergo malolactic fermentation. The 1-year aging on lees takes place in egg-shaped concrete vats. This is followed by a further 6 months of aging in square concrete vats.
