Vineyard

The whole bunches are trodden by foot for three hours in a traditional granite 'Calcatórium'. Pressing then takes place in a vertical press, after which the must flows down entirely by gravity. The juice ends up in underground concrete tanks where optimal, natural conditions of temperature and humidity prevail. Here, spontaneous fermentation with indigenous yeasts begins, entirely without artificial temperature control. The wine finally matures for one year in the same concrete tanks before being bottled unfiltered and without wood contact.

Winemaking

The Rabigato grapes come from a specific high-altitude plot at 500 meters in the Douro region. The soil is of average depth and is uniquely characterized by a fault line filled with micro-quartzite running through the plot. The management of this vineyard adheres strictly to organic and biodynamic principles to maintain natural balance. Due to its significant altitude, the vineyard benefits from large temperature differences between day and night, which preserves the acidity in the grapes. This specific 'telluric information' from the soil gives the wine a remarkable and energetic mineral profile.

De wijnregio bestaat uit Douro Superior, Cima Corgo en Baixo Corgo, drie subregio’s met elk een eigen klimaat en identiteit. Ooit zwom de elft, Alosa alosa, vanuit de oceaan de volledige rivier op. Dammen maakten die trektocht onmogelijk, maar de vis leeft voort in het logo van Mateus Nicolau de Almeida. Hij symboliseert zowel de onderlinge verbondenheid als de grote diversiteit van de Douro.
