Vinification
The grapes undergo a strict selection upon arrival at the winery. The bunches are fully destemmed. The grapes undergo a cold maceration of 8 to 10 days, after which fermentation starts with indigenous yeasts. Fermentation takes place at a low temperature, and the pigéage technique is applied at the start. 50% of the wine is aged in new wooden barrels, the rest of the juice matures in used barrels.

Domaine Charlopin-Tissier
Frankrijk · Bourgogne
