The vineyard in Les Longeroies, located halfway up a slope, consists of clay and limestone.

Vinification

The grapes undergo a strict selection upon arrival at the winery. The bunches are fully destemmed. The grapes undergo a cold maceration of 8 to 10 days, after which fermentation is initiated by indigenous yeasts. Fermentation proceeds at a low temperature, and at the start, the pigéage technique is applied. Maturation takes place for 30% in new oak barrels, while the rest of the juice ages in used barrels.

Zoals de naam van het domein al doet vermoeden, is Charlopin Tissier het gezamenlijke levenswerk van Justine Tissier en Yann Charlopin. Na hun ontmoeting tijdens hun wijnstudies in Beaune bouwden ze vanaf 2012 stap voor stap hun eigen domein uit in Morey-Saint-Denis. Hun visie steunt op drie pijlers: familiaal, traditioneel en gepassioneerd.
