The Pinot Noir originates from organically farmed plots in Morey-Saint-Denis, in the heart of the Côte de Nuits. The vineyards are located on calcareous clay-limestone soils, which provide a beautiful combination of structure, finesse, and mineral tension.

Vinification

After manual harvesting, the grapes are fully destemmed and undergo cold maceration. Alcoholic fermentation proceeds spontaneously with indigenous yeasts. The wine then slowly matures on its fine lees during a long élevage,

Na hun ontmoeting tijdens hun wijnstudies in Beaune bouwden ze vanaf 2012 stap voor stap hun eigen domein uit in Morey-Saint-Denis. Hun visie steunt op drie pijlers: familiaal, traditioneel en gepassioneerd.
