Vineyard
For this cuvée, the oldest Pinot Noir vines are used. The terroir consists of 'Terres Blanches', which is made up of calcareous clay. The 35-year-old vines yield 40 hl per hectare.
Vinification
The grapes are picked by hand and transported in small crates to the winery, which consists of three levels, allowing all processes to occur with the aid of gravity. There is also no contact with air as the grapes and juice move to a lower level. The Pinot Noir grapes pass through a very ingenious destemming machine that leaves the grapes completely intact. The 30-day maceration and fermentation thus begin with whole grapes without any risk of oxidation. The wine matures for 1 year in wooden barrels, half of which are new barrels and half 1-year-old barrels.
