Vineyard
The grapes come from a small parcel near the renowned hilltop in Pommard. The terroir consists mainly of clay and limestone. They perform a green harvest to keep yields under control.
Vinification
The grapes are picked by hand. Vinification takes 18 to 25 days, in contrast to the more common 10 to 12 days in Burgundy. This allows for slower maceration. Fermentation and malolactic fermentation take place in wooden barrels. The subsequent ageing begins with a 12-month stay in wooden barrels, with a limited percentage of new barrels. This is followed by 6 months in stainless steel tanks. Annual production is only 1,200 bottles.
