The grapes come from a sub-plot of only 36 ares on the southern flank of the Hengst hill overlooking Wettolsheim. The soil consists of marl and limestone that originated in the Oligocene. There are 5,500 vines per hectare. The 55-year-old vines ensure a yield of 45 hl per hectare.
Vinification
The bunches undergo an initial selection during picking, followed by a second round upon arrival at the winery. The bunches are destemmed, after which the co-maceration and fermentation begin. This process is initiated by indigenous yeasts and takes 19 days, using the *pigeage* technique. The wine matures for 15 months in small oak barrels, 14% of which are new. Production is limited to just 1,971 bottles and 50 magnums.
