Vineyard

The grapes come from a vineyard with a deep layer of loess resting on a granite subsoil.

Winemaking

The grapes are hand-picked at the end of October and transported in small crates to the winery. The whole bunches are pressed, followed by a slow fermentation. The wine matures for 20 months on the lees in stainless steel tanks. It is bottled unfiltered. The use of sulfites is limited to an absolute minimum.
