Vineyard

The grapes come from the Schafleiten vineyard, located at an altitude of 170 metres. The 23-year-old vines thrive in a soil of sandy loam, gravel and limestone. In the biodynamically cultivated vineyard, there are approximately 7,000 vines per hectare.

Vinification

The grapes are not destemmed and undergo a 4-day maceration. This is followed by pressing. Fermentation starts spontaneously and is followed by a 6-month maturation in wooden barrels, where malolactic fermentation also takes place.
