Vineyard
The grapes come from biodynamically managed vineyards with a subsoil of chalky tuffeau, typical of Saumur. Yields are low, and harvesting is done by hand to preserve the quality of the grapes. In the vineyard, minimal intervention is practised to respect the natural expression of the terroir. A late harvest ensures the grapes are fully ripe, which contributes to the aromatic intensity of the wine.
Winemaking
The wine undergoes a second fermentation in the bottle according to the traditional method. It matures for 9 to 18 months sur lattes, which ensures complexity and finesse. No sugar is added during disgorgement, making it a Brut Nature: dry, pure, and direct. Sometimes, a portion of the wine is fermented in old oak barrels to add extra texture. In vinification, Thierry Germain focuses entirely on the maximum expression of the grape and the terroir.

Domaine des Roches Neuves
Frankrijk · Loire
