Vineyard

The grapes grow in the Kirchensteig vineyard, which is only 0.9 hectares in size. As the name suggests, a path to the local church runs right alongside the vineyard. The very infertile soil consists of a deep rock layer with a very thin layer rich in granulite, a metamorphic rock, above it. This is the ideal soil for Riesling to shine. The plot faces southwest and slopes gently upwards at 7°, lying between 280 and 285 meters above sea level.

Winemaking

At the end of October, the organically grown grapes are harvested by hand and transported in small boxes to the winery. The whole clusters are pressed. This process is followed by clarification through sedimentation. The slow fermentation takes place in stainless steel tanks. Afterwards, the juice undergoes a long period of lees aging in stainless steel tanks, which takes 20 months.
