Vineyard

The vineyards are located in the foothills of the Massif des Maures. The soil, dominated by limestone, was formed during the Triassic period. The plots are protected from the moist sea winds, resulting in dry and warm summers and mild winter months, thus a typical Mediterranean climate. The terraced plots reach up to 330 meters in altitude, ensuring that the temperature fluctuations between day and night are perfect for bringing the grapes to full maturity in a harmonious way.

Winemaking

The different grape varieties undergo separate vinification. Immediately after arriving in the cellar, the bunches are pressed. After a temperature-controlled fermentation, the juice matures for several months on the lees in stainless steel tanks.

De geschiedenis van Commanderie de Peyrassol gaat terug tot 1204, toen de Orde van de Tempeliers het domein oprichtte als rustplaats voor pelgrims op weg naar het Heilige Land. Eeuwenlang werd het domein beheerd door de Tempeliers en later door de Ridders van Malta, die de wijngaarden met grote zorg onderhielden. Na de Franse Revolutie kwam Peyrassol in privéhanden en kreeg het onder Philippe Austruy vanaf 2001 een nieuwe dynamiek. Dankzij omvangrijke investeringen in de wijngaarden, de terrassen en de wijnkelders groeide het uit tot één van de toonaangevende domeinen van de Provence.
