Vineyard
The vineyards are located in Chaintres, Varrains and Saumur on calcareous tuffeau and clay soils. This subsoil gives Cabernet Franc its typical combination of freshness and chalky tension. The vines are on average around 25 years old. Biodynamic work and horse traction are used to respect the soil structure. Low yields ensure concentration and aromatic intensity.
Vinification
The grapes are harvested manually and strictly sorted. Fermentation usually takes place with indigenous yeasts and partly with whole bunches to increase structure and aromatic tension. Maceration lasts approximately 2 to 3 weeks, depending on the plot and the year. Maturation takes place for approximately 7–8 months in old foudres and used barriques to preserve the fruit. The wine is bottled unfiltered and with minimal or no added sulfites.
