The Malbec grapes come from the slopes of 'Bru' and from two different terroirs: 50% from the 'Tran,' a conical, stony, limestone-rich slope, and the other half from the high Mindel terraces, consisting of gravelly clay, a rich soil containing many large round pebbles. The 35 to 45-year-old vines yield 28 hl per hectare, with less than 0.5 kg of grapes per vine.

Vinification

The bunches are destemmed upon arrival at the winery. This is followed by fermentation and maceration, which together last 40 days. Alcoholic fermentation takes place at a temperature of 28 °C and the pigeage technique is applied at the start. Malolactic fermentation and 24 months of aging take place in a mix of 500-liter French oak barrels and large foudres. No sulfites are added during vinification. It is bottled unfiltered, with only a very minimal amount of sulfite added at this stage.

Château du Cèdre werd in 1958 opgericht door Charles Verhaeghe, zoon van de Vlaamse emigrant Léon Verhaeghe uit Moorslede. Sinds de jaren tachtig staan de broers Pascal en Jean-Marc aan het roer, elk met hun eigen specialisatie in wijngaard en kelder. Na een verwoestende hagelbui in 1995 kozen ze resoluut voor een meer natuurlijke aanpak, met als doel het unieke terroir van Cahors nog beter tot uiting te laten komen.
