Vineyard
The soil of the plots located at 350 meters above sea level falls under the Sidérolithique soil type. This acidic, iron-rich, and reddish soil was formed in the Early Tertiary from deposits resulting from the erosion of the Massif Central. The topsoil, which is rich in large round pebbles, quartz, and quartzite, rests on a hard layer of Secondary limestone. The average age of the vines is 40 years.
Vinification
The bunches are hand-picked and destemmed upon arrival at the winery. Vinification takes place naturally. Co-fermentation and maceration last 30 days and take place in concrete tanks. Foudres are used for the 18-month aging period.
