Vineyard
The plots are located on the flanks of an eroded plateau dating back to the Kimmeridgian, which was formed about 150 million years ago during the Late Jurassic period. Marine deposits have led to an abundant presence of fossils, notably a small comma-shaped oyster, Exogyra Virgula. The soil, situated at an altitude of 350 meters, consists of marl and marly limestone. The average age of the vines is 25 years.
Vinification
The bunches are hand-picked and destemmed upon arrival at the winery. The vinification takes place naturally. The co-fermentation and maceration takes 30 days. The 6-month aging process, like the rest of the vinification, takes place in concrete tanks.
