Vineyard
Varying from 700 to 1300 meters above sea level near Arafo. The vineyards are located at different altitudes, resulting in a diversity of microclimates and soil types, each exerting its own unique influence on the growth and ripening of the grapes. The higher altitudes offer cooler temperatures and longer ripening periods, while the lower altitudes can provide more shelter and warmth. This terroir contributes to the complexity and characteristics of the resulting wine.
Winemaking
After careful manual harvesting, the grapes are fully foot-trodden as whole bunches before spontaneous fermentation. The spontaneous fermentation takes place without the addition of cultured yeasts, allowing the natural yeast population on the grape skins and in the environment to initiate the fermentation. The wine then matures for several months in used French oak barrels. These barrels contribute to the development of complex aromas and impart subtle woody notes to the wine, while simultaneously preserving its fruity expression. Finally, the wine is bottled without fining or filtration and without the addition of sulfites, thus preserving the wine's natural vibrancy and purity.
