The vineyards are located in the Gers and benefit from two different soil types: calcareous clay and siliceous clay.

Vinification

After destemming and gently crushing the grapes, temperature-controlled fermentation and a short maceration follow. The wine then matures for eight months on the lees in stainless steel tanks, optimally preserving its freshness and pure fruit character.

Château du Cèdre werd in 1958 opgericht door Charles Verhaeghe, zoon van de Vlaamse emigrant Léon Verhaeghe uit Moorslede. Sinds de jaren tachtig staan de broers Pascal en Jean-Marc aan het roer, elk met hun eigen specialisatie in wijngaard en kelder. Na een verwoestende hagelbui in 1995 kozen ze resoluut voor een meer natuurlijke aanpak, met als doel het unieke terroir van Cahors nog beter tot uiting te laten komen.
