Vineyard

The grapes for this wine come exclusively from the estate's oldest vineyards, with vines averaging 30 to 40 years old. The plots are located on the sunny south-facing slopes of Monte Xiabre in Val do Umia, about 15 kilometers from the Atlantic coast. Old vines root extremely deep into the sandy loam topsoil to reach the pure, massive granite subsoil. The yield of these old vines is very low, resulting in intensely concentrated grapes that fully absorb the granite character of the soil. The vineyards are cultivated entirely by hand and without any chemicals.

Winemaking

The grapes are harvested by hand in small 16 kg crates. The whole clusters (including stems) are immediately and very gently pressed without the addition of sulfites. Alcoholic fermentation takes place with indigenous (natural) yeasts under temperature control in stainless steel tanks. After alcoholic fermentation, the wine undergoes a complete, spontaneous malolactic fermentation, which is rare in this region but contributes to stability. The wine then ages for at least 6 months on its fine lees (sur lie), which gives it its characteristic fleshy, unctuous texture.

In het uiterste noordwesten van het Iberisch schiereiland vinden we met Galicië de groene long van Spanje. Ten noorden van Portugal verandert de vrij recht lopende kustlijn plots in een grillig patroon met diep ingesneden baaien waar de invloeden van de Atlantische Oceaan vrij spel hebben. Op klimatologisch gebied is de wijnregio Rías Baixas een echt buitenbeentje en dit vertaalt zich dan ook in de stijl van de wijnen. De Alfonso wijnfamilie is hier al vele generaties actief. Het huidige wijnhuis in Caldas de Reis, in de vallei van de Umia rivier, is in 1982 door Francisco Alfonso opgericht. Tijdens zijn lange omzwervingen in Zuid-Amerika groeide het idee dat hij zich moest afzetten tegen de toenmalige trend van grootschalige en zelfs bijna industriële wijnbedrijven. Hij wou terug inzetten op authenticiteit en kleinschaligheid waarbij de wijnbouwer elk detail van het proces overschouwt.
