Vineyard
The grapes for this wine come from plots on the northern flank of Mount Etna, situated between 550 and 930 meters above sea level. They are located in the hamlets of Pietramarina, Allegracore, Piano Daini, Friera, Zucconero, and Marchesa. The 50-year-old vines grow on volcanic soil rich in sand and ash from Mount Etna.
Vinification
The fermentation in concrete tanks starts spontaneously due to indigenous yeasts. This process, which takes 15 days, occurs together with the maceration and is not temperature-controlled. The 16-month maturation takes place in a mix of old 228-litre oak barrels and concrete tanks.
