The grapes for this wine come from parcels on the northern flank of Etna, situated between 550 and 930 metres above sea level. They are located in the hamlets of Pietramarina, Allegracore, Piano Daini, Friera, Zucconero and Marchesa. The 50-year-old vines grow in volcanic soil rich in sand and ash from Etna.

Vinification

The fermentation in concrete tanks starts spontaneously due to indigenous yeasts. This process, which takes 15 days, occurs simultaneously with maceration and is not temperature-controlled. The 16-month aging takes place in a mix of old 228-liter oak barrels and concrete tanks.
