Vineyard
The vineyards are located on a plateau at an altitude of 93 meters south of the Loire. The soil consists of clay-silt soils with emerging black schist as the bedrock. This provides a combination of freshness and subtle minerality. The estate has been working organically since 2000. The wet vintage required a very careful selection to retain only perfectly ripe and healthy bunches.
Winemaking
The grapes were harvested entirely by hand with a strict selection in the vineyard due to the wet year 2024. The whole bunches were gently pressed pneumatically, after which the juice was separated from the coarse lees the following day. Fermentation occurred spontaneously with indigenous yeasts and lasted less than a month. The wine then continued to mature on its fine lees until April. Bottling followed after light filtration with a very limited sulphite addition of 1 g/hl.
