The grapes come from a mere 0.42-hectare plot whose 40% to 50% steep slopes overlook Wettolsheim. The soil of the 350 to 400-meter high vineyard, which is surrounded by forests, consists of granite. The densely planted vineyard has about 8,300 vines per hectare. The yield of 61 hl per hectare produces 3,300 bottles and 60 magnums. The average age of the vines is 19 years and they benefit from a south-southeast orientation.
Winemaking
Given the very steep slope, the picking must be done manually anyway. Fermentation is initiated by indigenous yeasts and is followed by a 10-month maturation. It contains less than 0.5 grams of residual sugar per liter.
