The grapes come from young vines on various terraces in the Valle de Güímar, located between 100 and 800 meters altitude on Tenerife. The volcanic sandy soils, interspersed with alluvial clay, ensure a distinct mineral expression. Thanks to the cooling Atlantic trade winds, the grapes retain their fresh acidity despite abundant sunshine hours. The vineyards are organically farmed, entirely hand-tended, and without the use of chemical pesticides.
Winemaking
The grapes are hand-harvested into small 15 kg crates and first undergo 24 hours of cold skin maceration. After gentle pressing, spontaneous alcoholic fermentation takes place in stainless steel tanks with indigenous yeasts. The wine then matures for five months in used oak barrels, with regular bâtonnage applied during the first two months. The wine is bottled unfined and unfiltered with only a minimal addition of sulfites.
