Vineyard

The vineyard, located at an altitude of 300 m, primarily consists of calcareous clay soil. The Syrah vines have an average age of over 30 years. The yield is 24 hl per hectare.

Vinification

The organically grown grapes are hand-picked and undergo a strict selection during harvest. They are then transported to the winery in small crates. Only the Syrah and Grenache are destemmed. The grapes undergo traditional vinification where fermentation starts with indigenous yeasts. The juice is regularly pumped over and the pigeage technique is applied. After fermentation, the wine ages for 18 months in 3, 4 or 5-year-old oak barrels. Finally, the wine ages for another year in tanks before bottling. The annual production is 8,000 bottles.

Domaine Les Eminades

In het warme zuiden van Frankrijk ligt de Languedoc, een wijnstreek met zeer authentieke dorpjes en een eeuwenoude cultuur van wijn maken. Mensen die al generaties lang met passie wijn maken. In tegenstelling tot andere Franse wijnstreken vind je hier wel nog betaalbare kwaliteitswijnen. Limoux, Corbières en Minervois zijn de meest gekende plaatsen, maar wij stellen u graag deze parel uit Saint-Chinian voor : Domaine les Eminades uit Cébazan dat in 2002 door Luc en Patricia Betonni werd opgericht. Ze leerden elkaar heel toepasselijk kennen tijdens een initiatie “wijn degusteren”. Patricia heeft farmacie gestudeerd en Luc is oenoloog. Les Eminades komt van de term “Eminada” die zijn oorsprong vindt in Italië. Patricia en Luc vonden het een passend eerbetoon aan hun grootouders die vanuit Italië naar Frankrijk waren geëmigreerd.
