Appeal - Cairanne
Vineyard
The vineyards are situated on the hills around Cairanne, in the north of the Vaucluse, with abundant sunshine and mistral winds that keep the grape clusters healthy. The soil consists of pebbles and calcareous gravel on beige and red marl, which provides both power and a certain freshness and tension. The Grenache and Carignan vines are partly old, resulting in low yields and extra concentration. The estate operates organically, with an emphasis on soil conservation, manual labor, and respect for the terroir.
Vinification
The grapes are harvested entirely by hand and strictly selected for ripeness and health. Fermentation takes place in concrete vats, which helps preserve freshness and the pure fruit character. The wine then matures for approximately 14 months in wooden barrels, refining its structure and beautifully integrating aromas of spices, cocoa, and wood. This is a limited, individually numbered cuvée, underscoring the emphasis on selection over volume.
