The vineyards are located in the Atlantic-influenced Lisboa region. The proximity of the ocean provides cooling winds that give the grapes freshness and aromatic tension. The Tinta Roriz and Castelão grapes thrive in this climate, developing both ripe fruit and lively acidity. The grapes are hand-harvested to ensure optimal ripeness and quality. The result is a wine that reflects the character of this coastal region.
Vinification
The grapes are hand-harvested and spontaneously fermented with natural yeasts. Vinification is done with minimal intervention to preserve the pure character of the grapes. After fermentation, the wine matures for six months in traditional terracotta amphorae. This method allows for gentle micro-oxygenation without oak influence. As a result, the wine retains its fruity expression while gaining additional texture and structure.
