Vineyard
The vineyard is located in the village of Chacé, more specifically in the hamlet of Les Poyeux. The soil consists of a mixture of limestone, clay, and sand, resting on a chalk subsoil. The average age of the vines is 35 to 45 years, yielding 45 hl per hectare. The vineyard is cultivated using organic and biodynamic methods.
Vinification
The grapes are hand-picked and transported in small crates to the winery. Upon arrival, the grapes undergo a second selection. The grapes are destemmed and macerated for 2 to 5 days. Fermentation with indigenous yeasts takes place in 60 hl conical vats at a temperature between 15 and 22 °C. Finally, the wine ages on lees for 1 year in a mix of 60 hl and 12 hl oval wooden barrels. It is bottled unfiltered.

Roches Neuves kreeg in 1992 een nieuw hoofdstuk toen Thierry Germain zich in Saumur vestigde. De historische wijngaarden, waarvan sommige teruggaan tot 1850, waren voordien eigendom van Denis Duveau. Dankzij de inspirerende vriendschap met Charly Foucault van Clos Rougeard groeide Thierry uit tot één van de grote voortrekkers van de biodynamische wijnbouw in de Loire. Sinds 2004 werkt het domein volledig volgens deze filosofie.
