Vineyard

The vineyards for this cuvée are located on the slopes of Mount Ventoux. This high altitude results in fresh wines with beautiful acidity. The exact soil composition depends on the altitude, but generally, the soil consists of marine limestone deposits from the Tertiary period. On this reddish covering, we also find the typical Mediterranean round pebbles.

Vinification

After harvesting, the grapes are lightly crushed before undergoing an extended fermentation in concrete tanks of 150 and 300 hl. After fermentation, the different grape varieties are blended, after which the 10-month maturation begins.
