Vineyard
The grapes come from various plots around San Gimignano, including Larniano, Montagnana, Santa Margherita, and Lazzeretto. The soils primarily consist of tuff and sand, with varying presence of yellow clay. The vines are on average 30 years old and are planted at a density of 5000 vines per hectare. Yields are controlled to a maximum of 75 hl/ha. Harvesting is done manually with strict selection.
Winemaking
The grapes are gently pressed as whole bunches, followed by fermentation in temperature-controlled stainless steel tanks at around 19°C. The wine then matures for five months on its fine lees in stainless steel. This approach maximises the preservation of fruit freshness and purity. Wood is deliberately not used to emphasize tension and minerality. The result is a direct, vibrant, and terroir-driven style.
