Vineyard
The grapes come from plots with different terroirs: 50% of the Pinot Noir vines grow on the typical 'terres blanches' subsoil, 40% grow on 'caillottes', and the remaining 10% thrive on 'silex' soil. This flinty subsoil is also typical of the Loire region. The average age of the vines is 25 years, yielding 45 hl per hectare.
Vinification
The grapes are hand-picked and transported in small crates to the winery, which consists of three levels, allowing all processes to occur with the help of gravity. There is also no contact with the air as the grapes and juice move to a lower level. The Pinot Noir grapes pass through a very ingenious destemming machine that leaves the grapes completely intact. The 30-day maceration and fermentation thus start with whole grapes without any risk of oxidation. Aging takes place for 80% in oak barrels and for 20% in concrete vats.
